I don’t know about you mamas, but I have been spending most of these summer days outside playing with my girls. This leaves me not a whole lot of time in the kitchen to get our meals ready, so finding recipes that are quick and easy are just my thing!
Today I’m going to share with you my QUICK and EASY summer chicken salad recipe. Whether you eat it as a sandwich or dip into it with crackers, this is a yummy treat for everyone!
Quick and Easy Summer Chicken Salad
Prep: 15 minutes
Serves: 4 sandwiches
Ingredients:
3 cups chicken, cooked and shredded
3/4 cup mayonnaise
1 cup halved grapes
1 small Apple, cubed
1 stalk celery, sliced
1/4 cup chopped pecans
salt and pepper to taste
Steps:
1. Combine ingredients in small bowl.
2. Place in airtight container and refrigerate for 4 hours or overnight.
3. Spoon mixture onto toasted bread, crossants or bagels. Can also be served work chips or crackers.
There you have it! Super simple and delicious. I like to make this as a double batch and have it twice in one week. It keeps great in the fridge and is great for the family on the go. I hope you enjoy it as much as we do 🙂
